Ingredients

  • 1 cup arborio rice
  • 6 cups pho broth
  • 2 shallots minced
  • ½ cup white wine
  • ½ cup grated parmesan cheese
  • 2 tbs olive oil
  • 3 tbs butter
  • 1 tbs oregano
  • 2 tsp black pepper

Steps

  1. In a pan on medium heat, pour in the olive oil.
  2. Add the minced shallots and let it cook for 2 minutes until soft.
  3. Add in the arborio rice and make sure the rice is covered in olive oil and shallots.
  4. Pour in the white wine until the rice absorbs it.
  5. Slowly add in the pho broth ½ cup at a time. After each pour, stir the rice until it absorbs all the broth.
  6. Once all the broth has been absorbed, cut the heat and add the butter, parmesan cheese, oregano, and black pepper. Mix until it is completely incorporated.
  7. Top with additional parmesan and serve.
