Tortellini en Pho Brodo

Ingredients

  • 300g “Tip 00” flour (~2cups)
  • 3 room temperature eggs
  • Braised Beef
  • Pho broth

Steps

  1. On a clean surface, create a well with the flour.
  2. Crack the eggs into the center and scramble with a fork, keeping it contained in the well.
  3. Once the yolks are incorporated, slowly add in more flour from the inner side of the well.
  4. Whent he mixture becomes thick, mix in the rest of the flour with your hands and knead.
  5. Knead the pasta dough until you have a smooth ball.
  6. Cover in plastic wrap and set aside at room temperature for 30 minutes.
  7. With a rolling pin, roll out the dough ~⅛ inch thin.
  8. Cut into small squares, fill with bits of braised beef.
  9. Fold diagonally, seal the edges, and close the bottom corners.
  10. Boil a pot of water, salt it like the ocean, and boil the tortellini until they float.
  11. Transfer the tortellini into a bowl, cover in pho broth, and serve.
